Lazy Dinner Tonite #5

Linguine with Mussels and Clams

This is a family favourite for weeknight dinners. With a finite amount of time available to me, this dish is super easy and I can whip it up in under 30 minutes.


500g linguine pasta

1kg mussels

500gm vongole clams

1 leek thinly sliced

250g punnet cherry tomatoes

Handful of Parsley roughly chopped

1/4 bottle white wine

100gm unsalted butter

Olive oil


Chilli flakes

Salt and pepper

Parmesan flakes if desired


Cook pasta according to instructions on packet. Yup, I’m too lazy to make pasta from scratch, being time poor and all that. Drain and set aside.

Heat oil in frypan then add garlic and sliced leek, cook till softened. Add butter, chilli flakes and tomatoes. Cook for a minute. Add mussels, clams and wine and cover with lid. Leave to cook until shells are opened.

Add linguine and mix well with shellfish and butter sauce. Season with salt and cracked pepper.
